Geuze is made from lambiek (lambic) returned from different years ("seasons") . Lambic is brewed from water,barley and unmalted wheat. No addition of yeast ; the process of fermentation is setup by an inoculation of the wort by the microbial flora (pitching).

A series of complex biochemical pathways is still yielding its secrets to brewing science.

A European directive concerning agriculural products and food makes a disctinction between "oude geuze" ("old gueuze") and "geuze". "Oude Geuze" is entirely made from lambic as in conjuntion to "geuze".
